Lir’s Salted Caramel Chocolate Cake

If you are looking to make the ultimate show stopping dessert, then Lir’s Salted Caramel Chocolate Cake is the option for you. Taking inspiration from BBC Good Food’s Salted Caramel Chocolate Cake Recipe, we have created the perfect light and fluffy sponge with a salted caramel filling. Featuring two types of Lir Chocolate: Lir Salted Caramel Truffles and Lir Dark Chocolate Truffles, this chocolate cake is a guaranteed winner. 

Ingredients

For the sponge:

  • 115g salted butter
  • 2 packets of Lir Dark Chocolate Truffles 
  • 150ml milk
  • 225g sugar
  • 2 tsp vanilla extract
  • 2 large eggs, separated
  • 150ml crème fraîche
  • 225g self-raising flour
  • 1 tsp baking powder

For the caramel:

  • 450g caster sugar
  • 2 tbsp golden syrup
  • 115g salted butter
  • 125ml double cream
  • 2 tbsp crème fraîche
  • 2 tsp flaky sea salt 

For the chocolate ganache:

Method

  1. First, you should make the caramel. Pour 100ml of water into a large saucepan. Then, add the sugar and golden syrup and gently cook until melted. Once this is done, turn the heat up slightly and cook until the caramel turns a dark golden-brown colour. You will need to swirl the pan occasionally to prevent sticking, but do not stir the ingredients. Turn off the heat and whisk in the butter, double cream, crème fraîche and sea salt. Whisk this together until smooth and then leave to cool until the mixture is slightly set. If you like to prepare things in advance, you can make this 3 days before the cake, and just leave it to chill in the fridge. To warm it up, gently reheat it until it is soft enough to spread.
  1. Now, make the cake. Firstly, heat the oven to 180C and grease a cake tin or line it with parchment paper. Then melt the Lir Dark Chocolate Truffles, butter, and milk in a large pan over low heat and stir this until it is smooth. Remove this from the heat and then beat in the sugar and vanilla extract. In a separate bowl, beat the egg yolks and crème fraîche, and then mix this into the chocolate mixture. After this you should add in the flour and baking powder. Whisk the egg whites in a clean bowl and then stir 1/3 of the egg whites into the cake mix and gently fold in the rest. You should then pour the mix into the prepared tin and bake for 40-50 minutes. Leave the cake to cool for 20 mins and then let it finish cooling on a wire rack after it has been removed from the tin.
  1. For the ganache, heat the Lir Dark Chocolate Truffles and cream together over low heat until the chocolate has fully melted. Then, pour the mixture into a bowl to cool down.
  1. To assemble, slice the cooked cake in half horizontally. Add in the caramel to the middle, like a sandwich. Spread the chocolate ganache over the top of the cake and sprinkle with some sea salt flakes and Lir Salted Caramel Truffles. Enjoy!
